[MEI-L] Rename the MEI master-branch

Dear MEI community,


As another follow-up, today we continued the discussed transition and renamed the "master" branch for all main MEI GitHub repositories to "main". This includes

- https://github.com/music-encoding/music-encoding.github.io
- https://github.com/music-encoding/sample-encodings
- https://github.com/music-encoding/encoding-tools
- https://github.com/music-encoding/guidelines
- https://github.com/music-encoding/schema


While this will not affect you if you have not forked any of the aforementioned repositories, fork owners may want to adjust their respective local branches to keep in sync. A nice and easy to follow description of the necessary steps can be found here: https://stevenmortimer.com/5-steps-to-change-github-default-branch-from-master-to-main/ (There are 5 simple steps that can be completed in under 1 minute).

To follow up on this discussion, the community has decided on 'stable' as the appropriate replacement. This is just a 'heads-up' that I will be making the change today, so please update any of your tools, workflows, and other dependencies to reflect this change.
